Organic Primitivo Ancient Wheat Flour
Type 2 ancient soft wheat flour, Primitivo variety (registered trademark Podere San Bartolomeo), organic, cultivated in our company and stone ground.
It is a variety of Tuscan soft wheat (type 2), the same cultivated by our grandparents in the last century on our hills, kept in purity and rediscovered for the uniqueness of its nutritional characteristics (very similar to the most famous ancient Verna wheat) and for the historic value in our Company.
The semi-elongated grain has a lowest gluten content (0.9%) compared to the average value of traditional flours (14%), which makes it particularly light and digestible. The flour, very rustic, is ideal for the production of naturally leavened and long-life bread and for the preparation of biscuits e leavened bakery products.
